Every season brings its fruit. It’s 32°C in Cognac. The lush vineyards are blooming with promise and the narrow streets of the old town are buzzing with activity. It’s summertime, festival time, time to explore the rolling hills of Grande Champagne on foot, by bicycle or in a hot-air balloon – and the ideal time to visit the House of LOUIS XIII and escape into the cool tranquility of our cellars.
Here, deep beneath the chalky ground, all is silent and still. Nature is at work in another Time dimension. Rows upon rows of traditional tierçons fill the vast space, their fine oaken staves blackened by the soft, slow exchange between the eaux-de-vie inside and the air outside.
The André Hériard Dubreuil cellar is particularly special. Built over three levels out of wood and stone, it’s cooler and darker than the rest. In the inner sanctum, the temperature remains between 12° and 19° throughout the year and the humidity is high – around 80%.
As soon as you arrive, you smell something you’re going to feel: the angel’s share of LOUIS XIII. Step inside, acclimatize yourself to the half-light and climb down the wooden staircase: you’re closer than ever to the roots of the terroir. The air is chilly, but the moist warmth of the forest carpet is distinct – the scent of mossy banks and tree bark, of wild mushrooms and berries. A taste of what is to come.
