The stories that the walls of Vue de monde could tell! Founder and former Executive Chef, Shannon Bennett tells a famous story that’s truly iconic. "Many famous people have dined at Vue de monde but we never cook and tell. However, there was a day when a few guys jumped off the balcony of our 55th floor! I was in the kitchen at the time and I rushed over to see parachutists wave at me dressed in tuxedos. I had no idea what they were doing and why they were waving, but I feared the worst. I had someone try and help me open the door and reach them, but it had been jimmied shut with a wedge of wood. It was actually Harry Kewell! The jumpers landed on King Street below in one piece and ended up part of some Crusty Demons movie !"

Even though I’m from the Loire Valley, I never grew up with an interest in wine when living in France – I wasn’t really exposed to it. My true love of wine was forged on a backpacking trip through the vineyards of Mendoza. The vineyards seated at the bottom of the Andes, the connection between wine and the community, the joy and passion of the people making it, I was hooked !
I remember very well the day I tasted Louis XIII for the first time. I was working at Dinner by Heston Blumenthal in London and we were very lucky to have a training before getting it on the list. I couldn’t wait to have it on our digestif trolley and introduce it to some of our guests.

Dorian Guillon grew up in the Loire Valley, but fell in love with wine while backpacking in Mendoza, Argentina. In 2012, through hard work, perseverance and humility, Dorian secured his first sommelier position at Dinner by Heston in London. Then in 2014 he became Assistant Head Sommelier at three-Michelin-star restaurant, Alain Ducasse at The Dorchester. Dorian became part of the Vue de monde family in 2017 and joined the Court of Master Sommeliers in 2018, becoming one of only 6 in Australia and 256 in the world.
