Blvd Manuel Ávila Camacho # 67, Colonia Palmas Polanco

Sir Winston Churchill's is unique as it creates an experience of elegance and refinement reflected so naturally in the British way of life. The English people have always loved the best and for that reason have an enormous appreciation for fine French wines, spirits and international cuisine. Churchill's is an English country mansion nestled unexpectedly within the very heart of Mexico City.
The abundant amount of gold and silver mined in Mexico since 1550 created the Currency of Global Trade for 300 years bringing exotic goods, colors and spices collected in the Philippines and shipped across to Acapulco and via Veracruz trading as far as Europe and Egypt. Thus Mexico historically provides a sophisticated clientele that appreciates tradition while remaining open to different people and new experiences.
In Mexico, because of the Cornish Miners, the Cornish Pasty was already popular so when opening Churchill's, the Prime Rib of Roastbeef was immediately accepted together with Yorkshire Pudding, Beef Wellington, Cambridge sausages and other specialities!
Churchill's was built as a private home inspired by a property in Surrey, on the outskirts of London. It became a Restaurant in 1972 and has had since a unique position in Fine Dining in Mexico. The rich mahogany paneling and exquisite decor is a work of Art in itself and 44 years of success is due to a dedicated team of people who know their customers and give tasty food together with a welcoming, attentive and caring service to all.
If Churchill's was a song it would be the all-time classic of Louis Armstrong singing, 'What a wonderful World':
I see trees of green, red roses, too,
I see them bloom, for me and you
And I think to myself…
WHAT A WONDERFUL WORLD.
A song of deep gratitude!
My passion and appreciation for wines and spirits has been developing throughout my years of working actively at Sir Winston Churchill´s. I have had the privilege of tasting wines from the best vineyards and learning from experienced sommeliers and Ambassadors like Rodolphe de Lapeyrouse of LOUIS XIII Cognac in Mexico.
The greatest inspiration I must say has come from getting to know the wines from the producers themselves. They transmit the faith and dedication needed in working their vineyards, growing and caring for their grapes, battling the uncertainty of climate and harmonizing with the mysteries of nature, to create the unique characteristics of their wines and spirits like notes in a musical composition.
Many of these vineyards have been in their families for generations and they have become the responsible guardians of an age-long tradition going back in history to the beginning of humanity itself.
As restaurant owners, my parents would take us every summer to France to learn about and experience first hand the best of food and the way of living that they deeply appreciated.
I have a vivid memory of my father in the gardens of a beautiful Chateau of the Loire Valley, smoking his Cuban cigar and sipping an exquisite elixir served from a bottle that glittered like a jewel in the warm afternoon sun. It was magical!
Years later I discovered that this Jewel was a hand-blown crystal decanter containing the inspired choice of "eaux de vie" blended over more than my whole life-time and aged in ancient barrels of oak wood, the LOUIS XIII de Rémy Martin Grande Champagne Cognac.
I would take them on a mystery tour of their palette. I would evoke their curiosity and imagination by holding a crystal glass of the amber liquid at an arm's length from them where the first scent is detectable. Can they perceive the fresh flowers of Jasmine and Honeysuckle? Moving the glass closer, I would challenge them to sniff as if it were a delicate wine, the flavors of prune, fig, walnut, hazelnut and nutmeg.
Up closer, can they find aromas of vanilla, honey, spice and oak?
With just a small drop on their palate, they will feel the thrilling flavors to be velvety and harmonious. They will be amazed to feel that they are sipping time itself! A Cognac blended from 1200 "eaux de vie", the youngest of which is at least 40 years old, aged in ancient oak barrels. They will be having the unique experience of "TASTING HISTORY"!!
Perhaps my dream is that this Life-work would be continued over the next generations of children and grandchildren, if it were their true passion and not an empty tradition for them.
However, between the miracle of our conception and the unacceptable event of death, there is the mystery of our lives.
I don´t want to DREAM…………………… LIFE - I WANT TO LIVE IT NOW!!!
